Basically, the meatloaf cupcakes probably don’t seem real to me. Is it just me or the idea of Mini Keto Breakfast Meatloafs is cutely magical? and it’s such an expeditious and basic recipe. Just mix pork sausage, ham, cheese with whatever you have on hand, add your preferred flavors to make these meatloaf cupcakes tasty as fit.
Do you know the best part? unlike a full-size meatloaf, meatloaf cupcakes/dumplings are so fast to cook. I’m always talking about “leftovers are gold”, but they really are. Make a huge batch, vary the flavors/zests, and freeze them. You will always have a bite, lunch, or breakfast ready.
Anything topped with cheese is always an instant success with my twin daughter and husband. And if you’ve been following my recipes for a while, you know I love adding hidden veggies whenever I can, and these are no anomaly. You can even stuff some vegetables (just don’t tell my daughters).

Mini Keto Breakfast Meatloaf
Ingredients
- 2 tbsp ghee
- 6 large eggs
- 1 lb, uncooked ground sausage
- 1/4 cup, chopped yellow onion
- 4oz cream cheese, room temperature, divided
- 1 cup shredded cheddar
Instructions
- Preheat oven to 350 degrees F
- Grease small loaf pan with some ghee.
- In a large bowl, lightly beat the eggs. Add the sausage, onion, and half the cream cheese. Mix thoroughly.
- Pour the meatloaf and egg mixture into the loaf pan. Add to the oven and bake, uncovered, about 30 minutes or until stiff.
Notes
- Preheat oven to 350 degrees F
- Grease small loaf pan with some ghee.
- In a large bowl, lightly beat the eggs. Add the sausage, onion, and half the cream cheese. Mix thoroughly.
- Pour the meatloaf and egg mixture into the loaf pan. Add to the oven and bake, uncovered, about 30 minutes or until stiff.
- Remove from oven and let sit for 5 minutes. Some fat may have risen to the top and begun to cool. You can use a spoon to lightly scrape it off (it should come right off without ruining the meatloaf top.)
- Spread the remaining cream cheese over the top of the meatloaf, then top it with cheddar cheese and scallions. Add the meatloaf back to the oven.
- Bake for about 5 more minutes, then switch to Broil for about 2-3 or until the cheddar cheese begins to golden and crisp.
- Remove from oven, and let your morning meatloaf sit for at least 5 minutes before slicing and serving.
