Keto Tuna Rolls

Mornings are super occupied for me because of my husband who has to leave for work and my daughters who are either pestering each other or me. And often that means my lunch would be unspecial, bland, and uninspiring. I usually end up having some form of egg and noodles and call it a day. I really love cucumbers (because they are full of water which means no calories) and it’s always fun to find new approaches to utilize them.

I had the idea of Keto tuna rolls in my mind, I just knew that I wanted two things out of them, tasty and easily made. Simple as that! An effortless lunch or dinner that takes only ten minutes. Packed with protein and flavors.

Keto Tuna Rolls

A tasty keto spicy tuna roll that doesn't use raw fish! Makes great low carb appetizers or a quick lunch!

Ingredients
  

  • 1 can tuna
  • 2 Nori Sheets
  • 2 tbsp mayonnaise
  • 2 tbsp chopped cilantro (unless you hate cilantro)
  • 1 celery stalk, chopped
  • salt and pepper to taste
  • Srirachi sauce

Instructions
 

  • Mix tuna, mayonnaise, celery and cilantro in a bowl. Season with salt and pepper
  • Place Nori sheet on a sushi mat with the rough non shiny side facing up
  • Spread half the tuna mixture on bottom half of sheet (see picture). Line avocado slices alongside the tuna
  • Using the mat, roll the sheet over the tuna until it is rolled into a cylinder. Apply a little pressure until the roll holds together on it's own, then release it from the rolling mat
  • Repeat with second nori sheet and the rest of the tuna mixture.
  • Allow to sit for a few minutes so the nori sheet absorbs some moisture
  • Take a very sharp knife and slice the roll into approximately 6 pieces.Squirt the top of each roll with a dab of Srirachi sauce.
  • Serve immediately with sugar free picked ginger on the side.

A very important note: the tuna really needs to be drained well. I squeezed out as much water as I could so it had that fuzzy dehydrated look. I mixed hot sauce, spice and a little mayo in the tuna then sliced some small strips of avocado, roll it all in and feel proud of myself.
