I own the crown for the Queen of a sweet tooth. It’s been noticed by everyone! I could eat sweets for every feast of the day and go to bed content. So when I started eating keto, I had to cut out sugar altogether, and needless to say, I was annoyed. But that was to be expected- sugar is highly addictive, and when you take it away after so many years, you get withdrawal symptoms. As with all addictions, it takes time and energy to heal the body. After a few grueling days, maybe a week, the sugar yearnings started going away.

At the peak of my keto dieting, I never even thought about dessert. My body was running perfectly fine without that brownie for dessert daily. I was making batches of souffle for my daughters. And as soon as I was done, I thought of my husband and me. Why should we be deprived of it? And I knew that if I made just a few improvements, I could turn it into a Keto Lava Cake. Which, not to mention, turned out amazing!

Some people don’t like the cooling effect of erythritol. You can also use half erythritol 1/2 cup and half Stevia; 1/2 teaspoon is equal to 1/2 cup. Another option is to bake them in a smeared muffin tin with less cooking time. Enjoy!
