You guys, I have great news. I made this Keto cauliflower cheese soup with onions and my husband ate it and asked for seconds. My husband has never eaten an onion without lamenting and bemoaning (and often gagging, if I were, to be honest) so this Keto Cauliflower Soup recipe was a success story.
This healthy Keto cauliflower soup was honestly a big hit with my whole family. My twin daughters turned their nose up at it when they saw it (let’s be honest – it’s not the prettiest soup), but once I persuaded them to try a spoon, and then they ate a whole bowl willingly.
Keto Cauliflower Cheese Soup

- Bring the whole milk to a boil in a large pot (like a cast-iron Dutch oven).
- While whisking, add the lemon juice one tablespoon at a time in one minute intrevals until curdles form on top.
- Turn off the heat and pour through a cheesecloth placed over a bowl. Let strain for 10 minutes.
- Transfer the curds to a blender or food processor and blend for 2-3 minutes until smooth. Season with salt. Store refrigerated until ready to use.
This Keto cheese cauliflower soup is a healthy, low carb dinner option that’s perfect for chilly nights. Top it off with some grated cheddar and fresh cracked pepper. Add in some heavy cream, cream cheese, and grated cheddar and stir until melty and smooth. This cauliflower cheese soup is seriously satisfying and so flavorsome!
